This is how we do NOT hold our baby dolls 🙂
We’ve been doing really well with not eating out as much. Planning out the meals and only buying what we need at the grocery store has been saving us money, I can already tell a difference! Plus, not having all kinds of crap in the house means I don’t eat it 🙂 I’ve also been trying new recipes and have found some great ones. Here are a few that I found and used this week.
I cheated on this one 🙂
- Package of frozen Italian meatballs
- 1 jar Spaghetti Sauce (I used garlic & basil)
- Provolone or Mozzarella cheese (for toppings)
- Hot dog buns from the bakery
I thawed out the meatballs, then I browned them to get a little crust on them. Put them in the crock pot with the jar of sauce and let it simmer most the day. Then loaded up the hot dog buns with the meatballs and added cheese, then popped them in the oven until the bread was crusty and cheese was melted. These were delicious! I froze the leftovers to use later in spaghetti.
Southwestern Cobb Salad
I was in the mood for Chili’s Southwestern Cobb salad, so I just googled it and found a recipe. I think this might have been my favorite of the week. I found the recipe here. I did alter the recipe some. I marinated the chicken in some olive oil, lime juice and some seasoning. That added a lot of flavor to the recipe. I also cut the ranch dressing in half for the dressing (not a huge ranch fan). This salad is very filling and satisfying!
- 1 lb Hamburger
- 1 can condensed mushroom soup
- 1 can cheddar cheese soup
- 1 pkg tatertots
This is a fairly quick recipe and something I make at least once a month or so. I don’t know why, but I do love this recipe. I sometimes add another half can of cheese soup, just to make it cheesier. Brown the hamburger with whatever seasoning you want. Mix the soups together, then add the hamburger. Pour into a 9×13 casserole dish, top with tatertots. Bake at 350 for about 45 min (depending on how crunchy you want the tots). Let sit for a good 5 min. to let it set up, then serve. Usually serve this with a side salad or vegetable.
Chicken & Cheese Tostadas
Found this recipe at Kraft recipes, a go to site for me to get recipes. All their recipes have ingredients that I can get at a normal grocery store 🙂 I changed a few things. I didn’t want to take the time to cook the chicken over the stove (lazy), so I threw the chicken in the crock pot and let it cook in there. I added a can of rotel instead of the tomatoes b/c I wanted a little extra kick. I decided to add the leftover relish from the cobb salad to add a little more to the dish when we ate it. This was a great recipe that I will be adding to my rotation!
Weeknight Cheese Quiche
Found here. Have to admit, didn’t make this one yet. We had enough leftovers to last us, so I think I’ll try it tomorrow. It sounds great and I’ve tried a few other quiche recipes from Kraft that were great.
Hope everyone has a great weekend! We are looking forward to spending lots of time outside in the warm sunshine!!
Daddy’s Home! March 21, 2010
The hubs was gone this past week, traveling to the Dominican Republic with G.O. Ministries. A great organization that he has partnered with. Please check out the website, they are doing a ton of stuff, especially with helping Haiti. Funny story, I went to the DR with G.O. my senior year of high school (um yeah, 10 years ago) and Jacob just in the past year has hooked up with them.
We are very glad to have Jacob back home, it was a very long week without him here. And it just so happened to be the hubs birthday today, the big 27. I won’t lie, I had issues with 27 last year, I don’t know why, but that was the first birthday since 21, where I felt I was actually getting older. Of course, it may also been we’ve been married for 5 years and we have a daughter 🙂 We had a good family day just hanging out. Jacob requested chicken salad and cookie dessert for dinner, which I would have never thought of making. So glad I asked. Torah was very excited about Jacob’s birthday, especially the “cake” and candles. Makes me very excited about her birthday in August, her 3rd birthday!
I’m pretty tired at this point, so I’m just gonna go ahead and post the pics and a funny video 🙂 Hope everyone had a great weekend!
This is probably pretty high on my list of favorite dessert recipes. It is quick and easy to put together and you can switch up the ingredients to make something totally different. The following way is our favorite. I got the recipe from Kraft a few years ago and it is a go to recipe.
1 pkg. (18 oz) refrigerated chocolate chip cookie dough (I sometimes use more, depends on the size of pan)
1 pkg (8 oz) cream cheese
1/3 cup sugar
2 cups thawed Cool Whip
1 tbsp unsweetened cocoa
2 cups sliced strawberries
Chocolate chips ( I sometimes substitute with Nutella, just b/c I LOVE it) If I’m feeling real fancy, I also add white chocolate chips 🙂
PREHEAT oven to 350°F. Press cookie dough into 12-inch pizza pan. Bake 20 min. or until golden brown. Cool in pan on wire rack.
BEAT softened cream cheese, sugar and cocoa powder in large bowl with electric mixer on high speed until well blended. Gently stir in COOL WHIP.
SPREAD cream cheese mixture over crust; top with strawberries and 1/4 cup chocolate chips. Serve immediately or cover and refrigerate until ready to serve. Cut into 16 wedges to serve. Store leftover dessert in refrigerator.
Little Artist March 20, 2010
We’ve been spending a lot of time outside lately. It has been absolutely gorgeous, especially this week. I’m getting a little burned out on going to the park all the time, so I decided to try to find some things to do outside, but at home. We have a massive yard, but not a ton of outdoor toys. Have you seen how expensive those outdoor play yard things are? Ridiculous! I’ve been stalking craigslist to find some good outdoor toys and for garage sales. Plan on hitting a few in the next few weeks. One of the things we decided to do today was color and do stickers outside. Torah loves her little picnic table, so it worked out perfect. She ended up drawing pictures for Jacob and is so excited to give them to him. She kept saying, “I think daddy is going to LOVE these!”
Thankful March 19, 2010
This week has been an exhausting week. I’ve had problems sleeping and dealing with migraines (it’s that time of year), so that makes it a very long week for me. Last night especially was tough. I couldn’t for the life of me fall asleep, I think maybe around 3:30am. And for some crazy reason, Torah decided she would wake up at 6am, the girl who has been sleeping until 8:30 or 9! So, mama wasn’t running on hardly sleep and felt like a zombie, felt like I had a newborn all over again. So, my morning wasn’t going all that great until….the doorbell rang. Opened the door and there were flowers being delivered to me!! My in-laws had sent flowers to me, how awesome is that! It was totally what I needed. It was a very nice gesture that slapped me in the face and made me realize how thankful I am. I have a wonderful family, who I don’t get to see much anymore, but still think of me and knew I was having a hectic week.
Later this afternoon, I was getting very grouchy and was in need of a nap ( I know I sound like a toddler, but it was so true this afternoon). Lucky for me Torah ended up falling asleep, so I went ahead and took a snooze. We fell asleep around 3:30 and didn’t wake up until 7! HELLO! It felt SO great. So, today I am also thankful for naps 🙂
After we woke up, we went outside to water the flowers we had just planted this week. Walked around the corner to find a nice little box waiting for us. Oh, how I love getting little surprises! Mamaw and Pawpaw had sent Torah some new shoes and they are adorable.
So, I was having a cruddy day and then I received things that made me realize I should be thankful and they just made me smile.
Shopping Cart Full March 18, 2010
I check out Gap online pretty regularly, I always have. I’ve always loved there clothes and it is one of those stores, I can go in and know I’ll find what I need. Well the hubs is gone this week, so I’ve had lots of extra time at night, which means lots of browsing online 🙂 I tend to add anything/everything to my shopping cart when I like it. I don’t know why, but I do. I guess in hopes that magically, somehow it will pay for itself and end up on my doorstep! That hasn’t happened yet 🙂 However, it seems that my mom has seen things on the blog and then ordered them! Which I greatly appreciate, but no need to do so mom! That is not why I post my faves! So with all that, I happen to stumble across (HA!) Gap today and of course I see 2 new lines out and ADORE them! Here are some of my faves
